Banana Pancakes

Banana Pancakes are a great twist on regular pancakes. Bananas are put in the pancake batter instead of being used as a topping and sprinkled with granulated sugar.

- 1 cup all-flour
- 1/4 cup granulated sugar (additional sugar for sprinkling)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 1/2 cup whole milk
- 2 eggs
- 1 tablespoon vanilla extract
- 2 cups mashed ripened bananas
- 1/4 cup vegetable oil
PREPARATION
Mash peeled bananas and set aside.
Place paper towels on a platter for the fried pancakes/fritters and set aside.

In a large mixing bowl, combine flour, sugar, baking powder, and salt. Stir in milk, slightly beaten eggs, and vanilla. Add the mashed bananas until just combined. The batter will be runny.

Add oil to frying pan or skillet and heat on high heat. When the oil is hot, pour about 1/8 cup of batter into the hot skillet. Fry until little bubbles appear and the edges turn crispy brown. Flip the pancakes over to cook thoroughly.


Remove from skillet and place on paper towel-lined platter.

Transfer the pancakes to your plate and sprinkle with a little white granulated sugar.

- 1½ cup whole milk
- 2 eggs
- 1 tbsp vanilla extract
- 2 cups mashed ripe bananas
- ¼ cup vegetable oil (plus more needed for each batch)
Instructions
- Mash peeled bananas and set aside.
- In a large mixing bowl, combine flour, sugar, baking powder, and salt.
- Add milk, slightly beaten eggs, and vanilla and stir.
- Add the mashed bananas until just combined. The batter will be runny.
- Add oil to frying pan or skillet and heat on medium-high heat.
- Pour about 1/8 cup of batter for one pancake into the hot skillet. Fit a couple of pancakes in the pan, not allowing the sides to touch.
- Fry the pancakes until little bubbles appear and the edges turn crispy brown. Flip the pancakes over to cook thoroughly.
- Remove from skillet and place on paper towel-lined platter.
- Place on a serving dish and sprinkle the pancakes with a little white granulated sugar.
